May I recommend a belkin memo recorder for the ipod:

Unless the transcription service requires it, you don't wanna go analog recording, since getting it to digitize is a painful real time process. These new ipod memo recorders automatically transfer to you itunes library in CD quality (44.1 16bit)

The belkin and other ipod recorders support iListen transcription:

That should bring you costs way down, and ultimately, you'll have better quality recordings.

As for DJing. The current plans for headroom is to go back to just music for the bulk of shows. Bring the Vinyl. Bring that girl Melly. Bang... insta DJ practice sets.

I'd have to second mau on using a DAP if you can. You could also go the way of using Skype + HotRecorder (for Windows) or CallRecorder (for Mac) to edit them digitally.

Regarding your impending DJ fabulousness, I can always give our old friend Athena a ring. She's be a great resource for info and lessons and she would love it. There's only one caveat...she too is leaving for world travel around July/August.
